2007 TR Passalacqua Vineyard Cabernet Sauvignon

Tasting Notes

This wine was tasted on January 26, 2019 from a 750ml bottle that was stored between 50-55 degrees Fahrenheit. Older vintages may show some bottle variation depending upon storage conditions and differences in cork density. Also, please note that some library bottlings may take an additional one to two weeks to process and ship.

The 2007 blend of blocks from the TR Passalacqua Ranch smells of red raspberries, black licorice, and red plum. The palate is silky with soft, fine tannins, sweet oak and fennel. I suggest drinking this wine now through 2023.

Winemaker's Notes

All of the grapes for our coveted Cabernets come from the TR Passalacqua Vineyard. These prized 20-year-old vines are located on the western slope of Dry Creek Valley at a 400-foot elevation. The quality of the fruit comes not only from the exceptional terrain of the vineyard but also from meticulous farming practices. We grow balanced vines, using bunch thinning, leaf pulling, and limited irrigation to ensure the highest quality fruit. We drop fruit at various points in the growing season to promote even ripening, and concentration of flavors. The TR Passalacqua Cabernet is a testament to our belief that truly great wine is made in the vineyard.
