Classic Grilled Halibut

One of my all-time favorites. As with any recipe, start with fresh ingredients. If you didn't catch it in the past few days, search for fresh wild halibut from your local fish counter. Ask when the fish arrived at the store, or even ask if they have any in the back that is fresher than the fillets on display. Push for fresh!!!

Cook Time: 20 min
Serves: 4

Ingredients

  • 5 tablespoons butter, melted    
  • 4 Fillets of halibut    
  • 1 teaspoon rosemary, chopped    
  • 1 teaspoon tarragon, chopped    
  • 1 Lemon, cut in half to squeeze    
  • Salt and Pepper    

Instructions

  1. Heat the barbeque to 325 degrees Fahrenheit.

  2. Place halibut fillets on a platter. Squeeze lemon juice over the fish liberally.

  3. Finely chop rosemary and tarragon. Sprinkle over the fillets.

  4. Lightly salt and pepper.

  5. Once the grill has reached temperature, place the fillets on the grill.

  6. Occasionally drizzle the melted butter over the fillets as they cook.

  7. Watch the internal temperature of the fish and remove at 145 degrees F.

  8. Serve with a panzanella salad or grilled veggies—or both!
