Marinated Venison Steaks

Serves: 4

Ingredients

  • (4) 6-ounce boneless venison steaks    
  • ½ cup extra virgin olive oil    
  • 2 tablespoons red wine vinegar    
  • 1 teaspoon honey    
  • ½ cup basil    
  • ¼ cup chives    
  • ¼ cup parsley    
  • 2 garlic cloves, minced    
  • ½ teaspoon juniper berries, crushed    
  • 2 teaspoons ground black pepper    

Instructions

  1. Add all of the ingredients for the marinade (except the meat) to a food processor or blender and puree to a smooth consistency.

  2. In a non-reactive baking dish or gallon-sized plastic food grade storage bag, add the steaks along with the marinade. Marinate the steaks between 4 hours and 8 hours.

  3. Rinse the marinade off of the meat and dry thoroughly with paper towels. Season with salt and pepper.

  4. Heat a large skillet or grill over medium-high heat.

  5. If using a pan, add two tablespoons of cooking oil to the pan. If grilling, lightly brush the steaks with cooking oil.

  6. Cook the steaks on both sides until a nice crust has formed and remove them from the heat when you reach your desired internal temperature. Let the steaks rest for 10 minutes before slicing across the grain.
