Wild Duck Breasts

Sprigs of Rosemary

Instructions
Pat duck breasts dry. If the fat layer is thick, score in a cross hatch pattern
Salt and Pepper both sides of the breasts and let sit for 1 to 2 hours.
When ready to cook, add olive oil to a skillet over medium heat.
Once the oil is hot, add the leaves of the rosemary.
Add the duck breasts, starting fat side down. Cook for 2 minutes each side for medium rare
Remove the duck breasts from the pan and let rest for 5 minutes. Slice and serve.
