Simple Seared Duck Breast

"My favorite go-to when I want pure duck flavor. Simple and easy, just a few ingredients and steps. This is great to eat on its own, with a simple salad, or dress it up with wild rice or creamy polenta." - Jason Passalacqua

Serves: 4

Ingredients

  • 4 Wild Duck Breasts    
  • 2 Sprigs of Rosemary    
  • Salt and Pepper, to taste    
  • 2 tablespoons Olive Oil    

Instructions

  1. Pat duck breasts dry. If the fat layer is thick, score in a cross hatch pattern.

  2. Salt and Pepper both sides of the breasts and let sit for 1 to 2 hours.

  3. When ready to cook, add olive oil to a skillet over medium heat.

  4. Once the oil is hot, add the leaves of the rosemary.

  5. Add the duck breasts, starting fat side down. Cook for 2 minutes each side for medium-rare.

  6. Remove the duck breasts from the pan and let rest for 5 minutes. Slice and serve.
