My favorite go to when I want pure duck flavor. Simple and easy, just a few ingredients and steps. This is great to eat on its own, with a simple salad, or dress it up with wild rice or creamy polenta.

Wild Duck Breasts

Sprigs of Rosemary

Olive Oil

Instructions
Pat duck breasts dry. If the fat layer is thick, score in a cross hatch pattern
Salt and Pepper both sides of the breasts and let sit for 1 to 2 hours.
When ready to cook, add olive oil to a skillet over medium heat.
Once the oil is hot, add the leaves of the rosemary.
Add the duck breasts, starting fat side down. Cook for 2 minutes each side for medium rare
Remove the duck breasts from the pan and let rest for 5 minutes. Slice and serve.
